		<description>I don&#039;t know if you have tried growing girasoles (Jerusalem Artichokes), but these actually improve in flavor if you wait until after the first frost.  In fact, leaving them in the ground and covering them with a heavy layer of leaves (2-3 feet deep here in the Denver area) allows you to harvest without hard digging throughout the winter.  Maybe the leaves would work for potatoes also?</description>

		<description>There was an interesting article in a local peridical, &quot;Grow&quot; appearing on Friday&#039;s in the Denver Post (daily newspaper).  The article described a technique for growing potatoes in a small area.  It doesn&#039;t totally fit the &quot;Square Foot&quot; gardening theme, but I believe that it would be close enough to be able to &quot;force&quot; it into that mold.

The technique was to start in an approximate 2&#039; x 2&#039; box with moveable sides.  You start by removing all sides except the bottom 4 sides.  Plant the potatoe eyes in this area.  As the potatoe vines grow, put some dirt over the vines covering about 1/3 of the vine height.  Let the vines continue to grow, each time it outgrows the box, add soil and another layer of sides until the box has grown to 2&#039; or so. 

The developer of this technique said that one of his understudies grew over 100 #&#039;s of potatoes in his 2&#039; x 2&#039; box.

A co-worker from Viet Nam said that the farmers there used a similar technique with sweet potatoes.</description>
